  • 5 medium Apples (peeled, cored, and chopped into ¼ inch cubes)
  • 1/3 cup Brown Sugar (packed)
  • 2 tablespoons Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Fresh Lemon Juice
  • 1 cup Water
  • 2 tablespoons Cornstarch
  • 8 6- inch Flour Tortillas
  • 1/3 cup Granulated Sugar
  • 1 ½ teaspoons Ground Cinnamon
  • Non-stick Cooking Spray

  1. Combine the peeled, cored, and chopped apples, brown sugar, granulated sugar, ground cinnamon, and lemon juice in a medium mixing bowl. Toss until the apples are well coated and you can smell the sweet cinnamon aroma.
  2. Heat a large skillet or saucepan over medium-high. Pour the apple mixture into the pan, add water, and bring everything to a gentle boil. Once you see bubbles, cover with a lid, turn the heat down to medium-low, and simmer until the apples become very tender and start to break down, filling the kitchen with cozy apple pie scent.
  3. Ladle out a portion of the cooking liquid from the pan into a bowl. Whisk in the cornstarch until smooth, then pour this slurry back into the apple mixture in the pan.
  4. Cook the apple pie dip over medium-low, stirring, until the mixture thickens and looks glossy and jammy. The apples should hold their shape but be soft enough to mash with a spoon.
  5. Remove the pan from heat. Decide if you want to serve the dip warm for gooey goodness, or chill it for a thicker, set texture.
  6. For the cinnamon sugar chips, preheat your oven. Line a baking sheet with parchment or lightly coat with non-stick spray.
  7. Mix the extra granulated sugar and cinnamon in a small bowl. Spray both sides of each tortilla with non-stick spray, then sprinkle with the cinnamon sugar.
  8. Cut the tortillas into wedges or strips—kitchen shears work great for this—and lay in a single layer on your baking sheet.
  9. Bake the chips until they’re golden and crisp, listening for the telltale little taps as you shift them on the pan.
  10. Let the chips cool on a rack so they stay crunchy. Serve the apple pie dip at your chosen temperature with a heap of crispy cinnamon chips for dipping.
