  • 1 head garlic (For roasting)
  • 2–2 ½ lbs potatoes (Russet, Idaho, or Yukon Gold, Peeled and cut into chunks)
  • 5 tbsp unsalted butter (For browning, cubed)
  • 3 tbsp cream cheese (For creaminess)
  • ½ cup hot milk (To mix in)
  • Salt and pepper to taste
  • Optional toppings : chives, parsley, ground pepper, melted butter

Method
 

Instructions
  1. Preheat oven or air fryer to 400°F.
  2. Trim ⅓ off the top of the garlic head to expose cloves. Drizzle lightly with oil, cover with the top, wrap tightly in foil, and roast for 25–30 minutes until golden and soft.
  3. Cool slightly, then squeeze out cloves.
  4. Peel (optional) and cut potatoes into 2–3 inch chunks. Place in a pot, cover with cold water, season generously with salt, and boil until fork-tender (25–30 minutes).
  5. Melt cubed butter in a saucepan over medium heat while stirring constantly until it foams, turns amber, and smells nutty. Remove from heat immediately.
  6. Drain potatoes, return them to the warm pot, and let sit for 1 minute to dry.
  7. Mash with roasted garlic, browned butter, salt, and pepper until fluffy.
  8. Mix in cream cheese and hot milk until smooth but not overworked. Adjust seasoning to taste.
  9. Garnish with parsley, chives, or extra butter. Enjoy immediately!
