Ingredients

Ingredients
  • lbs. green beans
  • 1 Tbsp avocado oil (or olive oil)
  • 6 garlic cloves
  • ¼ cup shredded parmesan
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • Lemon, to squeeze over the top (optional)

Equipment

  • baking pan
  • parchment paper

Method

Instructions
  1. Preheat the oven. Turn your oven on to 400 degrees and line a large baking pan with parchment paper. (You might need 2 pans depending on how many green beans you have.)
  2. Prep the beans. Trim both ends off your green beans and place them in a large bowl. (We’ll usually snap the ends off with our hands but using a knife to cut them works too.)
  3. Toss. Add the prepped beans, oil, minced garlic, parmesan, salt and black pepper to a large bowl and toss until the beans are fully coated.
  4. Roast. Arrange the green beans on your prepared baking pan and spread them out in a single layer. (It's ok if a few beans are overlapping.) Place them in the oven and roast for 15-20 minutes or until the beans are tender with crispy edges.
  5. Serve. Add a squeeze lemon over the top (if desired) and serve immediately.
