Crispy Rice Salmon Bites

  • 2 cups cooked short-grain brown rice, chilled
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • Cooking spray
  • 12 ounces skinless salmon fillet
  • 1 teaspoon avocado oil
  • 1/2 teaspoon garlic powder
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice
  • 1 medium avocado, diced
  • 1 teaspoon sesame seeds
  • 2 tablespoons sliced green onions

Method
 

Instructions
  1. Mix the chilled rice with the rice vinegar, sesame oil, and salt.
  2. Press the rice firmly into a parchment-lined 8-inch square pan and chill for 20 minutes.
  3. Cut the rice into 16 squares, spray lightly with cooking spray, and air-fry at 400°F for 12 minutes, turning halfway through.
  4. Brush the salmon with avocado oil, season with garlic powder, and bake at 400°F for 12 minutes, until it reaches 145°F.
  5. Flake the salmon and mix it with the Greek yogurt, sriracha, and lime juice.
  6. Spoon the salmon mixture onto the crispy rice squares.
  7. Top with avocado, sesame seeds, and green onions.
