  • 1 ½ lbs. Yukon gold potatoes (good for frying, creamy texture)
  • ½ yellow onion (adds flavor and sweetness)
  • 2 Tbsp olive oil (divided (for frying))
  • 1 Tbsp butter (for extra flavor)
  • 1 ½ tsp salt (divided (for seasoning))
  • ½ tsp freshly cracked black pepper (divided (for seasoning))
  • ½ tsp garlic powder (adds savory depth)
  • ¼ tsp onion powder (enhances flavor)

  1. Wash, peel, and dice the potatoes into small cubes. Add them to a large pot, cover with water, and stir in 1 tsp of salt. Bring to a boil over high heat, then reduce the heat to medium-high and let the potatoes par-boil for 5 minutes. Drain the potatoes in a colander. prep
  2. While the potatoes are boiling, dice the onion and set it aside. prep
  3. Heat 1 Tbsp olive oil and the butter in a large skillet over medium heat. Once the skillet is hot, add the drained potatoes in an even layer. Sprinkle with ¼ tsp salt and ¼ tsp black pepper. mix
  4. Allow the potatoes to cook undisturbed for 4-5 minutes, letting them get golden and crispy on one side. After 5 minutes, gently stir the potatoes to flip them, then add the remaining 1 Tbsp olive oil, diced onion, garlic powder, onion powder, and the remaining ¼ tsp salt and ¼ tsp black pepper. Stir everything to combine. cook
  5. Continue to cook the potatoes for another 7-8 minutes, stirring occasionally, until they’re golden and crispy on the outside and tender inside. finish
  6. Remove the skillet from the heat and garnish with chopped parsley or green onions if desired. Serve warm. finish
