  • 6 large eggs
  • 1/4 cup cooked bacon, crumbled
  • 1/3 cup ricotta cheese or shredded cheddar cheese
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Generously spray a 6-cup muffin tin with cooking spray.
  2. Roll out the thawed puff pastry and cut into 6 equal squares.
  3. Press each puff pastry square into the muffin tin, covering the bottom and sides.
  4. Spoon about 1 tablespoon of ricotta or cheddar cheese into each pastry cup.
  5. Sprinkle crumbled bacon evenly over the cheese.
  6. Carefully crack one egg into each cup.
  7. Season with garlic salt and black pepper.
  8. Bake for 25 minutes, or until the puff pastry is golden brown and the egg is set.
  9. Let cool slightly before serving.
