  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup Guinness beer
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 sheet puff pastry
  • 1 egg beaten (for egg wash)

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
  3. Add the onions, carrots, and garlic, cooking until softened.
  4. Stir in the tomato paste, thyme, salt, and pepper.
  5. Pour in the Guinness beer and beef broth, bringing to a simmer.
  6. Cover and cook for 1.5 to 2 hours until the beef is tender.
  7. Transfer the beef mixture to a pie dish and let it cool slightly.
  8. Roll out the puff pastry and cover the beef mixture, sealing the edges.
  9. Brush the pastry with beaten egg.
  10. Bake for 25-30 minutes or until the pastry is golden brown.
