  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped (optional)
  • 2 tbsp butter or oil

Instructions
  1. Gather all ingredients and chop the ham and green onions.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Whisk the eggs until fluffy, then pour them into the skillet. Cook gently for about two minutes until just set.
  3. Stir in diced ham and shredded cheese until melted.
  4. Spread half of the egg mixture onto one side of each tortilla, fold them over.
  5. In another skillet, heat remaining butter over medium heat. Cook each folded quesadilla for about three minutes per side until golden brown and crispy.
  6. Slice into wedges and serve warm with salsa or sour cream.
