Healthy Stuffed Pepper Soup

  • 1 tablespoon olive oil
  • 1 pound 93% lean ground turkey
  • 1 medium yellow onion, diced
  • 3 bell peppers, diced
  • 3 garlic cloves, minced
  • 1 can 28 ounces crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice
  • 1 cup shredded reduced-fat mozzarella

Method
 

Instructions
  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the turkey and onion and cook for 7 to 8 minutes.
  3. Add the bell peppers and garlic and cook for 4 minutes.
  4. Stir in the crushed tomatoes, broth, Italian seasoning, salt, and black pepper.
  5. Bring to a boil, reduce the heat, and simmer for 18 minutes.
  6. Stir in the cooked brown rice and simmer for 3 minutes.
  7. Ladle into bowls and top with mozzarella.
