  • 1 lb ground beef (85% lean)
  • 3 medium russet potatoes, cubed
  • 4 slices cheddar cheese
  • 2 large yellow onions, thinly sliced
  • 2 cups shredded lettuce
  • 1/2 cup sliced dill pickles
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 425°F (220°C) and place a skillet over medium heat.
  2. Toss cubed potatoes with 1 tbsp olive oil, salt, pepper, and garlic powder. Spread on a baking sheet and roast for 30–35 minutes until golden.
  3. In a small bowl, mix mayonnaise, ketchup, mustard, vinegar, and garlic powder to create the sauce. Chill until serving.
  4. In the skillet, cook onions with 1 tbsp olive oil over medium-low heat for 20–25 minutes until caramelized, stirring occasionally.
  5. Form beef into 4 thin patties, season with salt and pepper, and sear on a hot skillet for 2–3 minutes per side. Top with cheese during the last minute of cooking and cover briefly to melt.
  6. Layer bowls with shredded lettuce, roasted potatoes, cheesy patties, caramelized onions, and pickles. Drizzle with sauce.
  7. Serve hot and enjoy!
