- Beat the softened cream cheese in a mixing bowl until it’s completely smooth and looks creamy with no lumps—a silky start sets the tone for the whole pie.
- Add in the sweetened condensed milk and the fresh lemon juice. The lemon juice will start to thicken the cream cheese mixture as you mix.
- Continue mixing until the filling is fully blended, glossy, and all one texture. It should look velvety and taste like sweet lemon clouds.
- Pour the filling into your graham cracker pie crust, making sure to scrape out every last bit. The filling will be thick but pourable, easily spreading to the crust edges.
- Use a spatula to smooth the top—look for a satiny surface that’s almost reflective in the light.
- Refrigerate the pie for at least a few hours until set. The pie should jiggle just slightly when set and feel firm to the touch—no looseness in the middle.
- Slice using a sharp knife and serve chilled. The aroma of lemon hits you right away, and the filling will be creamy, cool, and soft—but still neatly sliceable all the way through.
