- Lightly grease a 9×13-inch baking dish.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat until liquefied (about 20 minutes).
- In a large saucepan, combine remaining sugar and heavy cream; simmer on low heat.
- Pour melted sugar into the cream mixture while stirring continuously.
- Increase heat to medium until reaching 244°F (softball stage).
- Stir in baking soda, then add butter and vanilla until smooth.
- Allow resting for 20 minutes, then stir in nuts.
- Transfer to the prepared dish and cool for 1-2 hours before cutting.
