  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat until liquefied (about 20 minutes).
  3. In a large saucepan, combine remaining sugar and heavy cream; simmer on low heat.
  4. Pour melted sugar into the cream mixture while stirring continuously.
  5. Increase heat to medium until reaching 244°F (softball stage).
  6. Stir in baking soda, then add butter and vanilla until smooth.
  7. Allow resting for 20 minutes, then stir in nuts.
  8. Transfer to the prepared dish and cool for 1-2 hours before cutting.
