One-Pan Creamy Tuscan Salmon

Pan-seared salmon in a creamy garlic sauce with spinach, tomatoes, and Parmesan.

  • 4 fillets salmon 5 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup low-sodium chicken broth
  • 3/4 cup evaporated low-fat milk
  • 1/2 cup Parmesan cheese grated
  • 3 cups baby spinach
  • 1 teaspoon Italian seasoning

Method
 

Instructions
  1. Pat the salmon dry and season it with the salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the salmon for 4 minutes per side, until it reaches 145°F, then transfer it to a plate.
  4. Reduce the heat to medium and cook the garlic and tomatoes for 2 minutes.
  5. Add the broth, evaporated milk, and Italian seasoning and simmer for 4 minutes.
  6. Stir in the Parmesan and spinach until the sauce is smooth and the spinach wilts.
  7. Return the salmon to the skillet and spoon the sauce over it before serving.
