  • 1/2 unit lemon grated zest from half a lemon
  • 1/2 unit lemon juice from half a lemon
  • 1/4 teaspoon salt
  • a dash black pepper
  • 1 tablespoon olive oil
  • 1/4 cup runny honey
  • 1 teaspoon spicy sauce
  • 1/2 teaspoon crushed chili flakes
  • 1 to 2 teaspoons freshly chopped rosemary
  • 1/4 cup walnuts chopped

Method
 

Instructions
  1. Add the ricotta cheese to a medium mixing bowl and whisk until smooth, creamy, and light.
  2. Stir in the grated lemon zest, lemon juice, salt, black pepper, and olive oil. Blend until everything is well combined and the ricotta looks pillowy and slightly glossy.
  3. Spoon the whipped ricotta mixture onto a shallow serving plate, swirling it gently with the back of your spoon for a pretty finish.
  4. In a small bowl, mix the runny honey with the spicy sauce and crushed chili flakes until the honey is flecked with red and slightly warm in color.
  5. Drizzle the hot honey mixture generously over the ricotta mound, letting it pool in the crevices.
  6. Scatter freshly chopped rosemary and chopped walnuts over the top for aroma and crunch.
  7. Serve immediately with crackers, sliced baguette, or crisp vegetables.
