Walking Taco Casserole

A warm, cheesy casserole made with seasoned ground beef, beans, tomatoes, salsa, crunchy chips, melted cheese, and fresh taco toppings.

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1/2 cup salsa
  • 1 cup corn, optional
  • 2 cups crushed Doritos or corn chips
  • 2 cups shredded cheddar or Mexican cheese blend
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, optional
  • to taste Shredded lettuce
  • to taste Diced tomatoes
  • to taste Sliced jalapeños
  • to taste Chopped green onions
  • to taste Fresh cilantro
  • to taste Sour cream or guacamole

Method
 

Instructions
  1. Cook the ground beef in a large skillet over medium-high heat until browned and crumbled, about 6–7 minutes. Drain any excess fat.
  2. Add the taco seasoning, Rotel tomatoes, salsa, beans, and corn. Stir and simmer for 5 minutes until thickened.
  3. Preheat the oven to 350°F (175°C).
  4. Grease a 9×13-inch baking dish and spread half of the crushed Doritos on the bottom.
  5. Spoon the taco meat mixture evenly over the chips.
  6. Spread the sour cream and cream cheese, if using, over the meat layer.
  7. Top with 1 1/2 cups of shredded cheese.
  8. Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
  9. Sprinkle the remaining cheese and Doritos on top.
  10. Bake for another 5 minutes to crisp the chips.
  11. Garnish with lettuce, tomatoes, jalapeños, green onions, cilantro, sour cream, or guacamole before serving.
