- Cook the ground beef in a large skillet over medium-high heat until browned and crumbled, about 6–7 minutes. Drain any excess fat.
- Add the taco seasoning, Rotel tomatoes, salsa, beans, and corn. Stir and simmer for 5 minutes until thickened.
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish and spread half of the crushed Doritos on the bottom.
- Spoon the taco meat mixture evenly over the chips.
- Spread the sour cream and cream cheese, if using, over the meat layer.
- Top with 1 1/2 cups of shredded cheese.
- Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
- Sprinkle the remaining cheese and Doritos on top.
- Bake for another 5 minutes to crisp the chips.
- Garnish with lettuce, tomatoes, jalapeños, green onions, cilantro, sour cream, or guacamole before serving.
